SoFine Recipe | Plant-based food

For you a SoFine Recipe, because we have the same question every night; what to eat? I received the SoFine foodbox with three recipes and all the ingredients (and more) to make one recipe. I was thrilled to start cooking that night.

SoFine is a plant-based food that you can eat instead of meat. Their products are very healthy for us, the environment and animals. Next to that, I must say, the taste of the SoFine tofu, is great! I am sure you’d like this recipe. My husband is a big fan of meat and grew up eating food from the Kurdish / Middle Eastern kitchen. Meat is an important ingredient here. I took the challenge to cook us plant-based food and he really loved it.

SoFine Recipe

Because I received all the ingredients in a box plus the recipe, cooking was a piece of cake. Follow this recipe and you’ll have a healthy and tasty meal tonight! I hope you’ll give it a shot.

Ingredients: (4 persons)

  1. Oil
  2. 500 g sweet potatoes in cubes
  3. 1 onion, cut
  4. 2 packages of SoFine Tofu à la minute
  5. 2 bell peppers, cut
  6. 1 zucchini, cut
  7. 300 g cauliflower, cut
  8. 2 garlic gloves
  9. 1 lemon, pressed juice
  10. fresh watercress

Bake the cubes of the sweet potatoes in oil for about 7-8 minutes.

Add the cut onion the last minute.
Add the two packages of SoFine Tofu and all the cut vegetables. Stir for 5 minutes.

Add the garlic and the lemon juice.

Put it all nicely on an plate and cut over some watercress to spice it up.

How simple is this? The most work is to cut the potatoes and vegetables, but once you’ve done that, the food takes hardly 15 minutes to make.

    Ziet er heerlijk uit en volgens mij ook makkelijk te maken en niet tijdrovend, wil het wel een keertje proberen, voor hoeveel personen is dit recept? De foto’s laten het water je mond inlopen, heerlijk ?

    4 personen, staat achter de ingredientenlijst 🙂 Het handige is dat je de zoete aardappel niet hoeft te koken, alleen maar te bakken 🙂

    Ooh, I am a huge fan of meat too, like your husband. I must admit that I do not really like eating vegetables but this recipe looks great! Maybe it can be a way for me to eat vegetables as this looked so yummy. Thank you for the share! <3

    I love to cook and experiment a little as well. I love it more when that experiment turned to a success. Lucky you to receive that box full of recipe and ingredients. It makes cooking easier. I also love tofu. I could replicate that in my kitchen and I hope it will turn good, too.

    Incredibly easy! This seems like a new concept to me. Getting all ingredients in a pack along with the recipe. That’s super cool. My favorite part here… it’s all veges 😀

    I’d not heard of watercress until now. But curious to know if it did come with soil like a growing plant? If yes then that’s a wonderful way to keep it 100% fresh.

    This is a great Idea. I am slowly getting into the vegan way of life and I love it. I love how creative this meal is and ingredients are real easy to find. We are what we eat and making healthy choices is the best thing you can do for yourself
